I made a healthy version of pizza, replacing the heavy bread crust with healthy cauliflower. I promise you this pizza was sooooo good I may never get pizza delivery again. It is gluten free, low carb, low calorie, and yummy.
Cauliflower pizza and crust
1 medium cauliflower head
1 cup mozzarella
Pizza Sauce, cheese, and all of your favorites
Preheat oven to 450. Put pizza stone or baking sheet in oven.
Cut green leaves from off cauliflower. Wash cauliflower. Dry cauliflower as much as you can. Cut cauliflower in half.
Grade cauliflower in small grader (should look like rice).
Only grade florets not stem. (You can use a food processor on pulse too)
Cook or microwave for 4 minutes.
Let cool a bit. Put graded cauliflower in heavy paper towel or thin clean dish towel or cheese cloth.
Squeeze Squeeze Squeeze all water out.
*You should get about a 1/3 – 2/3 cup of water.
Put cauliflower in bowl.
Mix in with your hands 1/2 cup mozzarella, oregano, basil, salt, and egg.
Put cauliflower mix on parchment paper and flatten to make round crust. Put parchment & crust over stone and bake 5-8 minutes.
Take out of oven and put pizza sauce and toppings on crust. Bake for 5-8 minutes or until cheese is melted and golden.
